The Healthy Banana Bread and, Oatmeal Recipe

Banana and oatmeal bread is an excellent choice for breakfast as it is healthy, light, and very nutritious. This way, we can slice it and eat it with fresh cheese, sugar-free jam, or avocado. It is an oatmeal and banana bread without flour, making it ideal for celiacs or people who follow a diet to lose weight. However, if you are looking for a gluten-free option due to intolerance or allergy, you should check that oats are free of this substance. Oats themselves do not contain gluten, however, sometimes during the packaging process they may come into contact with machines that do contain traces of gluten.

For all the above, the homemade bread that we will learn to prepare then does not carry sugar, since the goal is to prepare a healthy and low-calorie bread. However, this does not mean that it does not have a sweet touch since the fruit itself already provides the right degree of sweetness that it needs.

Ingredients:

  • 3 ripe plantains
  • 1 Cups Whole Wheat Oatmeal
  • 1 teaspoon of baking powder
  • high melted coconut oil cup
  • 1 egg
  • 1 pinch of salt
  • 1 teaspoon of baking soda

Steps to follow to make this recipe:

  1. Peel the plantains, chop them and mash them lightly with a fork. It is not necessary to grind them completely, as this would cause the dough to weigh too much and not grow properly in the oven.

Tip: Preheat the oven to 180 ºC with heat up and down.

2. Beat the egg with coconut oil for 5 minutes if you use a blender or electric rods. If you do it by hand, beat for a little longer so that they are sparkling and enough air is added. For the banana and oatmeal bread to rise correctly and become fluffy, this step is very important, so vigorously beating the eggs is one of the keys.

3. Add the beaten egg to the bowl with the bananas and mix well. You can integrate these ingredients with the same fork, with manual or electric rods, but keep in mind that we are still interested in not over-grinding the fruit.

4. Add the dry ingredients, that is, oatmeal, baking powder, baking soda, and salt. Incorporate with a spatula or spoon, making soft enveloping movements. Optionally, you can add any nuts you like to prepare, for example, banana bread, oats, and nuts.

Tip: Since whole-wheat flour cannot be sifted, mix aside from the dry ingredients and add air by stirring them with a fork a spoon. Then, to avoid lumps, add them to the dough gradually.

5. Place the dough in a rectangular mold about 20 cm long, previously greased and floured with oatmeal, and bake the oatmeal and banana bread for 40-45 minutes. If you have oatmeal, sprinkle a little on top, although you can also sprinkle chopped nuts or seeds. Depending on the type of oven, it may be ready sooner or it may take a little longer to make. Therefore, we recommend checking the bread from the 35-40 minutes of cooking.

Tip: Bake for the first 30 minutes with heat only down and turn the heat up after.

6. Remove the bread from the oven, let it warm, turn it out gently, and place it on a grate to finish cooling completely. Once cold, you can slice it and taste it during breakfast or snack. As you can see, this is a sugar-free banana bread very easy to make, delicious, and healthy. Oatbread and banana without flour and sugar – Tricks and properties

To make oatmeal and banana bread without flour, it is necessary to use oatmeal, but we may not have oatmeal either. In that case, what can we do? Very simply, it will be enough to crush oats until they are pulverized, just like that! That said, let’s go with a few more tricks to get a spongy and juicy homemade bread:

  • Beating the eggs with energy to introduce as much air as possible is one of the most important tricks, as it will depend on the dough growing in the oven.
  • Sifting flour is usually another key, however, when working with wholemeal it is not convenient to do this step. Unrefined flours should be stirred with rods or a fork to incorporate air.
  • Both salt and baking soda and baking powders help the dough elude properly. If you don’t have any of them, that’s fine, but try to add at least one of the three ingredients.
  • Baking the bread with heat only below also favors that the dough rises correctly. If baked from the beginning with heat up and down, it may be done on the outside but not on the inside, resulting in raw bread. After 30-35 minutes, it is possible to activate the heat up as well.
