The healthy pancake recipe with strawberries

Looking for a full and balanced breakfast at the same time as delicious? What if I also tell you that it is very easy to make and totally healthy? What if I got it! Healthy oatmeal and strawberry pancakes.

Honestly, they are the richest pancakes I have ever made. They are very spongy and have a sweet and soft taste. In addition, it is a full breakfast, balanced and with all the nutrients and vitamins to start the day with strength. The amount I’m giving you is for an average woman’s ration, so if you’re a man, you can double the amounts and enjoy twice as much.

The ration is approximately 250 kcal. 16 grams of protein, 9 grams of fat and 29 grams of carbohydrates, and an extra dose of vitamins C and A, thanks to strawberries.

Ingredients of healthy oatmeal and strawberry pancakes

  • ½ cup of flakes of oats
  • 1 complete egg + 1 egg white
  • 1 teaspoon of chia
  • 3 sachets of stevia (or the sweetener you prefer)
  • 3 strawberries, chopped
  • 3 tablespoons skimmed milk or preferably milk
  • ½ teaspoon of baking powder

First, put the oats in a mixer and spray them until you get the oatmeal. Once pulverized, add the chia and beat again to mix well with the oats. We lay the eggs and continue beating until all the ingredients are well integrated and the mixture acquires volume. After this, we add the rest of the ingredients to the mixer and blend them until the mixture is homogeneous and more liquid.

To make healthy oatmeal and strawberry pancakes spongy, it is advisable to make the dough the night before and store it in the fridge. In this way, the baking powder will do its job and the mixture will acquire more volume. If it is not possible to make them in advance, leave them for a few minutes at rest after preparing the mixture.

When the time comes to make the pancakes, we use a pan that doesn’t stick and pour a few drops of extra virgin olive oil, or coconut oil, we spread it well and wait for it to warm up. Careful not to burn the oil by overheating. We pour some of the mixtures and give it the round shape of the pancakes helping us with a spoon. Cover and let do on one side, turn around and do on the other until you complete the whole recipe mixture.

We serve pancakes on top of each other, tower-shaped. We accompany with more strawberries, honey, agave or maple syrup, or sugar-free caramel syrup.

Some tips and tricks when making pancakes

If we make the small pancakes, we’ll grow more, and we can make a tower like the one in the picture. In this way, our brain thinks it is eating more and is satiated much more than if we make the pancakes bigger and we only get 2 or 3 pancakes.

The trick for the pancakes to come out fluffy is first, spray the oats until you get the flour. Then blend the eggs for volume and airing, and finally, make the mixture the night before to rest and gain more volume thanks to the baking powder.

You will know when to turn the pancakes when on the top of the pancake appear some bubbles or holes. At that point we turn it around. The other side cooks very quickly, so be careful not to burn them.
