If the internet and new technologies have helped us to do anything in the kitchen, it has been to learn about new recipes that come to us from all over the world. We cook and test these new recipes, make them our own “tuned” to our liking, enjoy them at home and share them with all our “virtual friends”.

Thus they are creating fashions or times in which a particular recipe is the queen of all the nets: we happened with the pancakes, with the arch known smoothies and it seems that now the time has come for cloud bread: a pseudo-bread made without hydrates, easy to prepare and with many possibilities in our kitchen. Do you want to learn how to prepare it?

What is cloud bread?

Cloud bread is a product that wants to work like bread, but it is not bread: we can call it pseudo-bread or “quasi pan” if you want. It is not bread in the strictest form because one of the characteristics of bread is that it is made with cereals, and this is not the case. Not carrying cereals is how this pseudo-bread does not have carbohydrates.

Is it a bread substitute? Well, it can be, why not, in some cases: it is suitable for coeliacs because it does not contain gluten, and it can be helpful if you are controlling the amounts of macronutrients in your diet and have already made a good contribution of quality carbohydrates. But it’s not bread, even if it’s named after him.

In addition, as its flavor is neutral (not to say bland) we can “tune” it in different ways: we can add spices, seeds, chopped olives, a little special sweetener for oven if we are going to use it to accompany a sweet dish (as a base for some fruit pancakes is rich)… Ideally, we should try different modalities from the basic recipe and play with it.

The recipe of cloud bread

Ingredients:

  • 3 whole eggs (yolks and whites)
  • 100 grams of cream cheese or cottage cheese or sour cream (sour cream) or natural Greek yogurt
  • A little bit of chemical yeast
  • A pinch of salt

Elaboration:

The preparation is very simple and we will only need an oven that will preheat to 150 degrees. While the oven is heated, beat the egg whites to the point of snow and mix with the yeast.

On the other hand, we mix the yolks with the 100 grams of cheese, cottage cheese, sour cream or yogurt (as you see are creamy products and with a neutral flavor: you can use the light or 0% versions, but the result of cloud bread may not be as spongy).

Gradually incorporate the whites so that they do not fall down and, in a tray covered by the baking paper we are putting small amounts of the mixture. Finally, we put them in the oven at 150 degrees for 25 minutes, and ready!.

The cloud bread should be spongy on the inside and a little crispy on the outside. Now just add the ingredients that we like the most, and enjoy!
